Courgette Frite. The Food Gatherer's Note: Take advantage of the tail end of the courgette season with these highly addictive fried courgettes sticks, simple to make and slightly more virtuous than chips! Serve straight away with red pepper hummus.
Shape into walnut-size balls, then flatten. In a large bowl, whisk the eggs and then add the flour and baking powder and season. In a large saucepan, heat the oil until hot enough to make a piece of bread sizzle if dropped into it.
Heat a non-stick frying pan over a medium heat and add the oil.
Put the chopped spring onions in a bowl and crumble in the feta.
Heat the oil in a large, deep pan until slightly smoking. When you've squeezed out the liquid, put all of your courgette fritter ingredients into a large bowl and mix well with clean hands. Dry the courgettes gently with kitchen paper.
