Couscous Tfaya

Couscous Tfaya. Empty the couscous into the large bowl, and break it apart. If you wish to serve traditionally, mound the couscous in the center of a large platter, and spoon the hot tfaya over the top.

Tfaya refers to the sweet and spicy caramelized onions and raisins served with this dish. Unlike the well known seven vegetable Moroccan couscous, Tfaya is basically made of dried fruits and onions. Add the honey and let it caramelize over low heat.

In a non-stick pan heat the oil to medium and add the onions to begin cooking.

Add the raisins and cinnamon, a small amount of the chicken stock.

Some versions also include chickpeas, fried almond, mixed dried fruit like the peach. (In this photo below I have added dry peach and raisins). Use a slotted spoon or big fork to mix everything. Add the honey and let it caramelize over low heat.
