Pickles Courgettes

Pickles Courgettes. Courgette pickle is in essence slices of courggettes that sit in a jar of a spiced vinegar solution. The thickness of the slices is up to you - some people like them thin, some like them thick.

To make the pickling brine, put the vinegar, sugar, salt, mustard powder and seeds and turmeric in a large pot. Place the ice cubes in the bowl with the courgettes, then pour over enough cold water to cover the onion and courgettes completely. Slice the onions and zucchini or cucumbers and toss in a large bowl or clean bucket with all of the salt.

After an hour drain off all the liquid and wash the vegetables under cold running water to remove any residue of salt.

Bring the remaining ingredients to the boil in a large saucepan.

Cover with ice cold water and allow to sit for an hour. Drain well and very gently squeeze out any excess moisture. Versez la préparation sur les courgettes (complètement recouvertes).
