Courgette Mozzarella
Courgette Mozzarella. Stir the tomatoes and basil into the couscous and use this mixture to fill the peppers. Place the cookie sheet back into the oven and let the cheese get all bubbly and a bit browned.
Peel and finely chop the onion. Line along the base of the baking dish. Cut the mozzarella into slices, and lay half of the mozzarella over the tomatoes in the dish.
Toss to coat in the oil and spread out evenly.
Four:Transfer the courgette and tomato mixture to a baking dish.
Taste and season the tomato sauce. Prick the inner part with a fork close together. Using a vegetable peeler, slice the courgettes lengthways into ribbons.
